Holiday Baked Rabbit

We harvested a couple rabbits we raised yesterday and tonight we made baked rabbit. 

Here is our recipe

2 Rabbit Hind Legs
1 back 
(cut up if necessary to make 4 pieces)

coating for the rabbit - flour, garlic powder, pepper, salt, italian seasoning - put in plastic bag..

Use a egg to roll rabbit then shake in bag with seasonings. Place on a cookie sheet and drizzle lightly virgin olive oil. 

serve with white rice and carrots and cranberry sauce. 


  We love the Ozeri food scale to weigh our food with. We like to raise our own food but we do shop at the grocery store too. What is nice about a food scale is that you can do a lot with portion control for recipes and when we weigh to freeze our own meat and veggies or when we buy large amounts while shopping. There are so many measurements on the Ozeri scale and it is so compact I can't image life without it!
